Everyday around 3pm, the wonderful folks at L’Auberge would put out a few plates of cookies for their guests to enjoy.  Sometimes there was peanut butter cookies and other days they had white chocolate macadamia nut cookies.  But, everyday they also has this plate of goodness.  At first, I didn’t know that they were gluten free, but I immediately fell in love.  They were so chewy! I would look forward to cookie time everyday just so I cant have a cookie (or three).  Well, when I returned home, I was left without those delicious chewy cookies.  But I tweeted @Lauberge and Chef David Schmidt said that he would email me the cookie recipe! I was thrilled, I had been craving them like crazy.  He also said I can share them on my blog so all of you can enjoy the delicious cookies!!!

My original fear was that the cookies would involve 7 different flours and xantham or guar gum, things I don’t have on hand.  But, instead they use almond flour! I’m convinced it provides the chew! The add-ins are dried cherries, pecans and dark chocolate but you can use any combination of dried fruit and nuts you desire.  Dried bluberries + pistachios? Dried Cranberries + almonds? There are so many possibilities.

I am eating mostly vegan so I decided to replace the eggs with flax eggs! I also halved the recipe so instead of 4 eggs I made 2 flax eggs by combining 2 tbsp ground flax with 4 tbsp of warm water and let it sit and gel up

Mix all of the dry ingredients in one bowl {almond flour, salt and baking soda}

Then wet ingredients in another {oil, agave nectar, vanilla and flax eggs}

Then add wet to dry…

and stir!

Add in time!

Pecans

Dark Chocolate {I used a Godiva Dark Chocolate Bar with Almonds} + Cherries

Fold them into the batter

Then scoop them onto greased baking sheets and bake for 8-10 minutes

Mine were soft so I let them cool on the baking sheet before transfering them to a cool rack

and devouring

P.S. I am going to try making these with Whole Wheat Pastry flour or Spelt flour…I’ll keep ya posted!

These look so yummy! Can’t wait to make them. Just a quick question, if I wanted to use eggs instead of the flaxseed do I use 2 eggs?

Yes the recipe originally called for eggs.
